Chocolate Chip Mini Muffins
1/2 Cup Sugar |
1/4 Cup Shortening |
1 Egg |
1/4 Cup Milk |
1/2 Tsp Vanilla |
1 Cup All Purpose Flour |
1/2 Tsp Baking Soda |
1/2 Tsp Baking Powder |
1/4 Tsp Salt |
2/3 Cup Miniature Semisweet Chocolate Chips |
In a large bowl cream sugar and shortening until fluffy. Add egg milk
and vanilla, mix well. Combine dry ingredients. Gradually add to creamed
mixture, mix well. Fold in chocolate chips. Spoon about 1 tablespoon of
batter into each greased or paper lined mini muffin tins. Bake at 375
for 10-13 minutes or until muffins test done. Cool in pan 10 minutes
before removing to a wire rack.
