Cinnamon Coffee Cake Loaf
2 Cups Flour |
1 1/4 Cups Sugar Divided |
3 Tsp Baking Powder |
3 1/2 Tsp Cinnamon Divided |
1 1/4 Tsp Salt |
2 Eggs |
1 Cup Buttermilk |
1/3 Cup Vegetable Oil |
2 Tsp Vanilla Extract |
3 Tbl Butter Melted |
In a small bowl combine the 1/4 cup sugar and 2 tsp cinnamon. In a
large bowl combine the flour, 1 cup sugar, baking powder, 1 1/2 tsp
cinnamon and the salt. Add the eggs, buttermilk, oil and vanilla.
Combine until batter is smooth. Pour half of the batter into the loaf
pan. Into the small bowl add the melted butter and stir together. Put
on top of the batter in the loaf pan and cut through with a knife to
swirl. Top with rest of batter. Bake at 350 degrees for 55 to 60
minutes or until a toothpick inserted in the center comes out clean.
Cool on wire rack in pan for 10 minutes before removing from loaf pan.
