Whole Wheat Apple Muffins
1 1/4 Cup Flour |
1 1/2 Cup Peeled Apples, Chopped |
1/2 Cup Whole Wheat Flour |
1/2 Cup Brown Sugar, Packed |
2 Tsp Baking Powder |
1/4 Tsp Salt |
1/4 Tsp Cinnamon |
1/2 Cup Milk |
1/4 Cup Oleo, Melted |
1 Egg |
Topping |
1/4 Cup Brown Sugar, Packed |
1/4 Cup Nuts, Chopped |
1/4 Tsp Cinnamon |
Heat oven to 400. Lightly spoon flour into measuring cup; level off. In
small bowl combine apples and 1/2 cup of the flour; stir until apples
are well coated. In large bowl combine remaining flour, whole wheat
flour, 1/2 cup brown sugar, baking powder, salt and cinnamon. Mix well.
Add apples and remaining ingredients; stir just until moistened. In
small bowl combine all topping ingredients; mix well. Divide batter
evenly among muffin cups. Sprinkle each with about 2 teaspoons topping.
Bake at 400 for 20 to 25 minutes.
