Mini Peanut Butter Cups
3/4 Cup Peanut Butter |
1/3 Cup Sugar |
1 Egg |
1 Tsp Vanilla |
1/2 Tsp Soda |
1 Can Vanilla Frosting |
1/2 Cup Shortening |
1/3 Cup Brown Sugar |
2 Tbl Milk |
1 1/3 Cup Flour |
30 Small Peanut Butter Cups |
1 Food Coloring |
In a large bowl blend peanut butter, shortening and sugars, with mixer
on medium speed. Add egg, milk and vanilla, beat well. Combine flour and
soda, add to egg mixture, beating well. Shape dough into 1 inch balls.
Roll in the 1/4 cup of sugar. Place 2 inches apart on cookie sheet. Bake
at 350 degrees for 10 to 12 minutes, or until brown. Remove from oven
and immediately press half of a peanut butter cup cut side down into
each cookie, about 1/2 inch from bottom edge. Cookies will crack. Cool
for 1 minute, transfer cookies to rack. Cool to decorate, tint portions
of frosting desired colors with food coloring. Makes about 60 cookies.
