Great Pumpkin Cookies
2 Cup Flour |
1 Tsp Soda |
1 Tsp Salt |
1 Cup Brown Sugar, Packed |
1 Egg |
1 Cup Pumpkin, Solid Pack |
1 Cup Quick Oats (Or Old Fashion) |
1 Tsp Cinnamon |
1 Cup Oleo |
1 Cup White Sugar |
1 Tsp Vanilla |
1 Cup Semi-Sweet Chocolate Bits |
Preheat oven to 350 degrees. Combine four, oats, baking soda, cinnamon
and salt. Cream oleo gradually, add sugars, beating until light and
fluffy. Add eggs and vanilla, mix well. Alternate additions of dry
ingredients and pumpkin, mixing well after each addition. Mix in
chocolate bits. For each cookie drop 1/4 cup of dough onto a lightly
greased cookie sheet, spread into a pumpkin shape, using a thin metal
spatula. Add a little bit more dough for the stem. Bake at 350 degrees
for 20 to 25 minutes, until cookies are firm and lightly browned. Remove
from cookie sheet, cool on racks. Decorate using icing or peanut butter
to affix candies, raisins or nuts.
