Fudge Brownie Cupcakes
3 Squares Unsweetened Chocolate 1 Oz |
1/2 Cup Butter |
2/3 Cup Flour |
1/4 Tsp Baking Powder |
2 Large Eggs |
1 Cup Plus 2 Tbs Sugar |
1 1/2 Tsp Vanilla |
1/4 Cup Milk |
1/3 Cup Finely Pecans Or Walnuts, Chopped |

Heat oven to 325. Grease and flour 12 regular size muffin cups. Melt
chocolate and butter in small saucepan over low heat; stirring often.
Remove from heat and let cool slightly. Whisk flour and baking powder in
a small bowl until blended. In a medium bowl beat eggs on high speed
until frothy. Gradually beat in sugar. Continue beating until mixture is
pale and thick as mayonnaise. Reduce to low ; add chocolate mixture and
vanilla. Alternately beat in flour mixture and milk beginning and ending
with flour mixture. Beat in nuts. Pour into muffin pans. Bake 25 to 30
minutes until cupcakes are shiny and cracked on top, firm around the
edge but soft in the middle. Garnish with a dusting of powdered sugar.
