Sweet And Sour Pork
1 Can Pineapple, Cubed |
1 Large Tomato, Chopped |
1 Green Pepper, Chopped |
1 1/2 Cup Bread And Butter Pickles |
1 Egg |
1/4 Cup Flour |
1 Tsp Salt |
1/2 Cup Brown Sugar |
2 Tsp Soy Sauce |
2 Tbl Corn Starch |
1 Cup Apricot Preserves |
1 Lb Pork, Cubed |
Prepare pineapple, chop tomatoes, green pepper and cut pickle slices in
half. Cut pork into one inch pieces. Mix batter, one egg and 1/4 cup
flour and one teaspoon of salt. Mix pork and batter until well covered,
chill. Sweet and sour sauce. Puree 1/4 of the can of pineapple, add
vinegar, brown sugar, soy sauce and corn starch. Microwave until
slightly thickened. Set aside. Heat oil in wok or skillet until smoking
hot, add the batter covered pork, stir and fry until browned, set aside
and keep warm. Drain oil from wok keeping one tablespoonful. Add green
peppers to wok and stir fry then adding pickles, pineapple and tomatoes.
After this is done add browned pork and thickened sauce, mixing well.
Serve over rice or chow mein noodles.
