Vegetable Cacciatore Over Rice
1 Can Vegetable Broth |
1 1/2 Cup Uncooked Rice, Instant |
1 Tbl Oil |
1 Medium Onion, Chopped |
2 Clove Garlic, Minced |
1 Medium Green Pepper Cut Into, Cut 1/8" Strips |
8 Oz Fresh Mushrooms, Sliced |
1 Can Italian Style Stewed Tomatoes 15 Oz |
In medium saucepan bring 1 1/2 cups of broth to a boil. Reduce heat to
low; cover and cook 5 minutes or until all liquid is absorbed. Fluff
rice with fork. Heat oil in large skillet over medium heat. Add onion,
garlic, green pepper and mushrooms; cook 2 to 3 minutes or until onion
is tender. Add tomatoes and rest of broth. Reduce heat to medium; cook 4
to 5 minutes or until pepper is crisp tender. Serve over rice.
